  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can diced tomatoes undrained
  • 1 can corn drained
  • 1 can black beans rinsed and drained
  • 1 bag Fritos corn chips crushed
  • 2 cups shredded cheddar cheese

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.

  • Stir in the taco seasoning, diced tomatoes (with juice), corn, and black beans. Cook for 5-7 minutes, stirring occasionally, until heated through.

  • Spread half of the crushed Fritos in the bottom of a 9x13 inch baking dish.

  • Pour the meat mixture over the Fritos.
  • Sprinkle the remaining crushed Fritos over the top.

  • Bake for 15-20 minutes, or until heated through and bubbly.
  • Remove from oven and sprinkle shredded cheddar cheese evenly over the top. Let stand for 5 minutes before serving.
