Instructions
Preparation Steps
Preheat oven to 375°F (190°C).
In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.

Stir in the taco seasoning, diced tomatoes (with juice), corn, and black beans. Cook for 5-7 minutes, stirring occasionally, until heated through.

Spread half of the crushed Fritos in the bottom of a 9x13 inch baking dish.

Pour the meat mixture over the Fritos.
Sprinkle the remaining crushed Fritos over the top.

Bake for 15-20 minutes, or until heated through and bubbly.
Remove from oven and sprinkle shredded cheddar cheese evenly over the top. Let stand for 5 minutes before serving.
