  • 1 cup Quinoa
  • 14 ounces Firm Tofu pressed and cubed
  • 1 cup Vegetable Broth
  • 0.5 cup Black Beans rinsed and drained
  • 1 cup Corn frozen or canned

Preparation Steps

  • Cook quinoa according to package directions.
  • While quinoa cooks, crumble tofu and saute in a pan until browned.
  • Combine cooked quinoa, tofu, black beans, and corn in a bowl.
  • Serve and enjoy!
