A delicious and easy taco casserole recipe perfect for a weeknight dinner. Layers of seasoned ground beef, beans, corn, and cheese baked to bubbly perfection.

  • 1 lb Ground beef
  • 1 cup Taco seasoning
  • 1 can Diced tomatoes
  • 1 can Kidney beans
  • 1 cup Frozen corn
  • 2 cups Shredded cheddar cheese
  • 1 bag Tortilla chips

Instructions
 

Preparation Steps

  • Brown ground beef in a large skillet. Drain excess fat.
  • Stir in taco seasoning, diced tomatoes, and kidney beans. Simmer for 10 minutes.
  • Spread half of the meat mixture in a 9x13 inch baking dish. Top with half of the corn and half of the cheese.
  • Repeat layers with remaining meat mixture, corn, and cheese.
  • Top with tortilla chips.
  • Bake at 350°F (175°C) for 20-25 minutes, or until heated through and bubbly.
