Ingredients
  

Cheesecake Mousse

  • 227 g cream cheese softened
  • 170 g granulated sugar
  • 0.24 L heavy cream whipped to stiff peaks
  • 0.25 L milk
  • 10 g gelatin powder unflavored
  • 50 ml cold water for blooming gelatin

Strawberry Topping

  • 300 g fresh strawberries hulled and quartered
  • 50 g powdered sugar

Preparation Steps

  • Bloom gelatin by sprinkling it over cold water in a small bowl. Let sit for 5-10 minutes until thickened.
  • In a large bowl, beat softened cream cheese and granulated sugar until smooth and creamy.
  • Warm the milk slightly (do not boil). Add the bloomed gelatin to the warm milk and stir until completely dissolved. Let cool slightly.
  • Gradually add the milk and gelatin mixture to the cream cheese mixture, beating until well combined. Fold in the whipped heavy cream until no streaks remain.
  • Divide the mousse evenly among serving glasses or bowls. Chill in the refrigerator for at least 2-3 hours, or until set.
  • For the topping, gently toss the fresh strawberries with powdered sugar. Spoon the strawberry mixture over the chilled mousse just before serving.

Notes

Garnish with a fresh strawberry or a sprig of mint for an extra touch.
