Instructions
Preparation Steps
Heat olive oil in a large pan over medium heat. Add mushrooms and garlic and cook until softened, about 5-7 minutes.
Add orzo and cook for 1 minute, stirring constantly.
Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10-12 minutes, or until orzo is cooked through.
Stir in spinach and heavy cream. Cook until spinach is wilted and sauce has thickened, about 2-3 minutes.
Season with salt and pepper to taste.
Notes
