  • 1 cup orzo pasta
  • 10 oz cremini mushrooms sliced
  • 5 oz fresh spinach
  • 1 cup vegetable broth
  • 0.5 cup heavy cream
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • Heat olive oil in a large pan over medium heat. Add mushrooms and garlic and cook until softened, about 5-7 minutes.
  • Add orzo and cook for 1 minute, stirring constantly.
  • Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10-12 minutes, or until orzo is cooked through.
  • Stir in spinach and heavy cream. Cook until spinach is wilted and sauce has thickened, about 2-3 minutes.
  • Season with salt and pepper to taste.
