Chicken and Marinade

  • 1.5 pounds boneless, skinless chicken thighs
  • 0.5 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

For Serving

  • 1 medium lemon, sliced
  • 2 tablespoons fresh parsley, chopped for garnish

Preparation Steps

  • In a bowl, combine lemon juice, olive oil, paprika, cumin, garlic powder, cayenne pepper, salt, and black pepper. Whisk to combine.
  • Add the chicken thighs to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  • Preheat your oven to 400°F (200°C).
  • Arrange the marinated chicken in a single layer on a baking sheet. Place lemon slices around the chicken.
  • Bake for 25-30 minutes, or until the chicken is cooked through and the juices run clear. The internal temperature should reach 165°F (74°C).
  • Garnish with fresh chopped parsley before serving.
