Pancake Batter

  • 2.5 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 2 large eggs
  • 2 cups milk
  • 0.33 cup melted butter
  • 1 teaspoon vanilla extract

Toppings (Optional)

  • maple syrup

Preparation Steps

  • Preheat oven to 425°F (220°C). Grease a 13x18 inch rimmed baking sheet with butter or cooking spray.
  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • In a separate medium bowl, whisk together eggs, milk, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix; a few lumps are okay.
  • Pour the batter onto the prepared baking sheet and spread evenly.
  • Bake for 12-15 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  • Cut into squares and serve immediately with your favorite toppings.

Notes

This recipe is easily customizable with your favorite mix-ins like blueberries, chocolate chips, or nuts. For a fluffier pancake, ensure your baking powder is fresh.
