  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried oregano
  • 4 cups Chicken broth
  • 1 cup Frozen tortellini
  • 0.5 cup Parmesan cheese, grated

Preparation Steps

  • Brown the sausage in a large pot over medium heat. Remove the sausage and set aside.
  • Add the onion to the pot and cook until softened. Add the garlic and oregano and cook for 1 minute more.
  • Stir in the chicken broth and bring to a boil. Add the sausage and tortellini and cook until the tortellini are heated through.
  • Serve with grated Parmesan cheese.

Notes

This soup can be made ahead of time and reheated. Leftovers can be stored in the refrigerator for up to 3 days.
