  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 1 cup granulated sugar
  • 0.5 cup packed brown sugar
  • 0.5 cup unsalted butter melted
  • 2 large eggs
  • 1 cup pumpkin puree not pumpkin pie filling
  • 0.25 cup milk

Preparation Steps

  • Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  • In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  • In a separate medium bowl, whisk together the granulated sugar, brown sugar, melted butter, eggs, pumpkin puree, and milk until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  • Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

These muffins are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 3 days.
