  • 1.5 cups all-purpose flour
  • 1 scoop protein powder vanilla flavored
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 2 large eggs
  • 1 cup milk
  • 0.5 cup oil

Preparation Steps

  • Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  • In a large bowl, whisk together flour, protein powder, baking powder, and salt.
  • In a separate bowl, whisk together eggs, milk, and oil.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  • Fill each muffin liner about ¾ full.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

Notes

Store leftover muffins in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
