Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
In a large bowl, whisk together flour, protein powder, baking powder, and salt.
In a separate bowl, whisk together eggs, milk, and oil.
Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
Fill each muffin liner about ¾ full.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
Notes
Store leftover muffins in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
