Instructions
Preparation Steps
In a medium saucepan, combine the butter, sugar, milk, and cocoa powder. Bring to a rolling boil over medium heat, stirring constantly.
Boil for exactly 1 minute, then remove from heat.
Stir in the vanilla extract and peanut butter until smooth.
Add the quick-cooking oats and stir until well combined.
Drop spoonfuls of the mixture onto wax paper or parchment paper to cool and set.
Allow cookies to cool completely before storing.
Notes
These cookies are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 3 days.
