  • 0.5 cup unsalted butter softened
  • 0.5 cup coconut sugar
  • 0.25 cup maple syrup
  • 2 large eggs
  • 2 teaspoon vanilla extract
  • 2.5 cup all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup dark chocolate chips at least 70% cacao

Preparation Steps

  • Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter, coconut sugar, and maple syrup until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate medium bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Fold in the dark chocolate chips.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are golden brown and the centers are still slightly soft.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cookies are best enjoyed within a few days of baking. Store in an airtight container at room temperature.
