  • 1 cup Diced Onion
  • 2 cloves Garlic, minced
  • 0.5 cup Carrots, chopped
  • 0.5 cup Celery, chopped
  • 1 cup Chopped tomatoes
  • 6 cups Vegetable broth
  • 1 cup Diced Potatoes
  • 1 cup Green beans, trimmed and halved
  • 0.5 cup Small pasta (ditalini or elbow)
  • 0.5 cup Chopped fresh basil

Preparation Steps

  • Sauté onion and garlic in olive oil until softened.
  • Add carrots, celery, and tomatoes. Cook for 5 minutes.
  • Pour in vegetable broth and add potatoes. Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Stir in green beans and pasta. Continue to simmer until vegetables are tender and pasta is cooked through, about 10-15 minutes.
  • Stir in basil before serving.

Notes

For a richer flavor, you can add a tablespoon of tomato paste along with the onion and garlic. You can also add other vegetables like zucchini or spinach.
