  • 1 lb Yukon Gold potatoes
  • 4 cups Chicken broth
  • 0.5 cup Milk
  • 4 slices Bacon, cooked and crumbled
  • 1 cup Shredded cheddar cheese
  • 2 tablespoons Chopped chives

Preparation Steps

  • Peel and dice potatoes. In a large pot, combine potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  • Stir in milk, bacon, cheese, and chives. Heat through until cheese is melted and soup is heated through. Season with salt and pepper to taste.
