  • 1 pound ground beef
  • 1 package taco seasoning
  • 1 ounce tomato sauce
  • 1 can diced tomatoes, drained
  • 0.5 cup shredded cheddar cheese
  • 0.5 cup shredded Monterey Jack cheese
  • 1 can corn, drained
  • 1 can black beans, rinsed and drained
  • 0.5 cup sour cream
  • 0.25 cup chopped fresh cilantro

Preparation Steps

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.

  • Stir in the taco seasoning, tomato sauce, and drained diced tomatoes. Bring to a simmer and cook for 5 minutes.

  • Spread half of the seasoned meat mixture into the bottom of a 9x13 inch baking dish.
  • Layer with half of the shredded cheeses, corn, and black beans.

  • Repeat the layers with the remaining meat mixture, cheeses, corn, and beans.

  • Bake for 20-25 minutes, or until heated through and cheese is melted and bubbly.
  • Let stand for 5 minutes before serving. Top with sour cream and cilantro if desired.
