Instructions
Preparation Steps
Preheat oven to 375 degrees F (190 degrees C).
In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.

Stir in the taco seasoning, tomato sauce, and drained diced tomatoes. Bring to a simmer and cook for 5 minutes.

Spread half of the seasoned meat mixture into the bottom of a 9x13 inch baking dish.
Layer with half of the shredded cheeses, corn, and black beans.

Repeat the layers with the remaining meat mixture, cheeses, corn, and beans.

Bake for 20-25 minutes, or until heated through and cheese is melted and bubbly.
Let stand for 5 minutes before serving. Top with sour cream and cilantro if desired.
