  • 1 cup rolled oats
  • 0.5 cup packed brown sugar
  • 0.5 cup all-purpose flour
  • 0.25 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 0.5 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar for icing
  • 2 tablespoons milk for icing

Preparation Steps

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, combine oats, brown sugar, flour, baking soda, cinnamon, and salt.
  • In a separate bowl, cream together butter and granulated sugar until light and fluffy. Beat in egg and vanilla.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Drop by rounded tablespoons onto prepared baking sheets.
  • Bake for 10-12 minutes, or until golden brown.
  • Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  • While cookies cool, whisk together powdered sugar and milk until smooth. Drizzle icing over cooled cookies.

Notes

Store cookies in an airtight container at room temperature for up to 3 days.
