Heat olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
Add the chopped onion to the skillet and cook until softened, about 5 minutes.
Stir in the minced garlic, smoked paprika, cinnamon, cayenne pepper (if using), salt, and black pepper. Cook for 1 minute until fragrant.
Add the diced sweet potatoes to the skillet. Stir to combine with the turkey mixture.
Cover the skillet and reduce heat to medium-low. Cook for 15-20 minutes, or until the sweet potatoes are tender, stirring occasionally.
Serve hot. Garnish with fresh parsley if desired.
