  • Add chopped onion and minced garlic to the skillet. Cook for 5-7 minutes, until the onion softens and becomes translucent.
  • Stir in the chopped green bell pepper, beef broth, diced tomatoes (undrained), tomato paste, dried oregano, dried basil, and red pepper flakes (if using).
  • Bring the mixture to a simmer, then reduce heat to medium-low, cover, and let it cook for 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  • Season with salt and black pepper to taste.
  • Sprinkle shredded cheddar cheese evenly over the top of the skillet mixture. Cover again for 1-2 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh chopped parsley before serving. Serve hot, perhaps with rice, pasta, or crusty bread.
