Ingredients
  

Cookie Dough

  • 2.5 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Fudge Filling

  • 1.5 cups powdered sugar, sifted
  • 0.25 cup unsweetened cocoa powder, sifted
  • 0.5 cup unsalted butter, softened
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions
 

Cookie Dough Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  • In a large bowl, cream together butter and sugar until light and fluffy.
  • Beat in eggs one at a time, then stir in vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Drop rounded tablespoons of dough onto the prepared baking sheets.
  • Bake for 9-11 minutes, or until edges are set.
  • Let cookies cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Fudge Filling Instructions

  • In a medium bowl, beat together butter and sifted powdered sugar and cocoa powder until smooth.
  • Gradually add milk and vanilla extract, beating until the filling is light and fluffy.

Assembly

  • Spread a generous amount of fudge filling on the bottom of one cookie and top with another cookie.
  • Repeat with remaining cookies.

Notes

Store in an airtight container at room temperature.
