Instructions
Preparation Steps
Melt butter in a large pot over medium heat. Add onions and cook, stirring occasionally, until caramelized (about 30-40 minutes).
Add beef broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
Preheat broiler. Place baguette slices on a baking sheet and broil until golden brown.
Ladle soup into oven-safe bowls. Top with baguette slices and Gruyère cheese. Broil until cheese is melted and bubbly.
Notes
For a richer flavor, use a combination of beef and chicken broth. You can also add a splash of red wine to the soup.
