Preparation Steps
Separate the onion rings and set aside.
In a shallow bowl, whisk together 1.5 cups of flour, paprika, garlic powder, cayenne pepper (if using), salt, and black pepper.
In another shallow bowl, whisk together the milk and eggs.
Place the bread crumbs in a third shallow bowl.
Dip each onion ring first into the flour mixture, shaking off excess. Then dip into the egg mixture, letting excess drip off. Finally, coat thoroughly with bread crumbs, pressing to adhere.
Heat the vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat to about 350°F (175°C).
Fry the onion rings in batches, being careful not to overcrowd the pot, until golden brown and crispy, about 2-3 minutes per side. Use a slotted spoon to remove them from the oil.
Drain the fried onion rings on a wire rack set over paper towels.
Serve immediately with your favorite dipping sauce.
Notes
For extra crispiness, you can double-dip the onion rings in the egg and bread crumb mixture.
