  • 2.5 cups all-purpose flour
  • 0.75 cup granulated sugar
  • 2.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1 cup fresh cranberries, roughly chopped
  • 0.5 cup orange zest from about 2 oranges
  • 1 large egg
  • 1 cup milk
  • 0.33 cup vegetable oil
  • 2 tablespoons fresh orange juice

Preparation Steps

  • Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Gently stir in the chopped cranberries and orange zest.
  • In a separate medium bowl, whisk together the egg, milk, vegetable oil, and orange juice until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  • Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

These muffins are best served warm or at room temperature.
