Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Grease and flour a 9-inch pie plate.
In a medium bowl, combine rolled oats, flour, granulated sugar, and salt. Pour in melted butter and stir until combined.
Press about two-thirds of the oat mixture into the bottom and up the sides of the prepared pie plate.
In a large bowl, beat together softened butter and brown sugar until light and fluffy.
Beat in heavy cream, vanilla extract, and salt until well combined.
Pour the filling into the prepared crust.
Sprinkle the remaining oat mixture over the top of the filling.
Bake for 35-40 minutes, or until the filling is set and the topping is golden brown.
Let cool completely on a wire rack before slicing and serving.
Notes
This pie is best served slightly warm or at room temperature. It can be stored in an airtight container at room temperature for up to 2 days.
