  • 1.5 cup black beans rinsed and drained
  • 1.5 cup corn canned or frozen, thawed
  • 1 cup red bell pepper diced
  • 0.5 cup red onion finely chopped
  • 0.5 cup jalapeno seeded and minced
  • 0.5 cup cilantro chopped

Dressing

  • 0.25 cup olive oil
  • 2 tablespoon lime juice freshly squeezed
  • 0.5 teaspoon cumin
  • 0.25 teaspoon chili powder
  • salt to taste
  • black pepper to taste

Preparation Steps

  • In a large bowl, combine the black beans, corn, red bell pepper, red onion, and jalapeno.
  • In a small bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, and pepper.
  • Pour the dressing over the bean and corn mixture and toss gently to combine.
  • Stir in the chopped cilantro.
  • Chill for at least 30 minutes before serving to allow the flavors to meld. Serve with tortilla chips or as a side dish.

Notes

This cowboy caviar is best served chilled. You can adjust the amount of jalapeno to your spice preference.
