  • 2.5 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 3 teaspoons baking powder
  • 0.5 teaspoons salt
  • 0.5 cups unsalted butter, softened
  • 3 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 0.5 cup sweetened shredded coconut

Cream Cheese Frosting

  • 8 ounces cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk or heavy cream
  • 0.25 cup sweetened shredded coconut for decorating

Instructions
 

Cake Preparation

  • Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Add the softened butter and beat on medium speed until the mixture resembles coarse crumbs.
  • Add the eggs one at a time, beating well after each addition. Stir in the buttermilk and vanilla extract.
  • Fold in the shredded coconut.
  • Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.

Frosting Preparation

  • In a large bowl, beat the softened cream cheese and butter until smooth and creamy.
  • Gradually beat in the powdered sugar, alternating with the milk or cream, until smooth and spreadable.
  • Stir in the vanilla extract.

Assembly

  • Place one cake layer on a serving plate. Spread a generous amount of frosting over the top.
  • Top with the second cake layer and frost the top and sides of the cake.
  • Sprinkle the top and sides of the cake with the remaining shredded coconut.

Notes

For best results, ensure all ingredients for the cake and frosting are at room temperature.
