Slice each cinnamon roll in half horizontally to create two flatter pieces.
In a shallow dish, whisk together the eggs, milk, granulated sugar, cinnamon, and vanilla extract until well combined.
Dip each cinnamon roll half into the egg mixture, coating both sides. Let them soak for about 15-20 seconds per side.
Melt butter in a non-stick skillet or griddle over medium heat.
Place the coated cinnamon roll halves onto the hot skillet. Cook for 2-3 minutes per side, until golden brown and cooked through.
Repeat with the remaining cinnamon roll halves, adding more butter to the skillet as needed.
Serve warm, drizzled with maple syrup and dusted with powdered sugar, if desired.
