Preparation Steps
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg and vanilla extract until well combined.

In a separate bowl, whisk together the flour, baking soda, salt, and the instant vanilla pudding mix.

Stir in the chocolate chips.

Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are lightly golden and the centers are still soft. Cookies will continue to set as they cool.

Notes
For an even richer chocolate flavor, you can use a mix of semisweet and milk chocolate chips, or even dark chocolate chips.
