  • 1 medium butternut squash
  • 8 ounces pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon sage fresh, chopped
  • 1 cup parmesan cheese grated
  • 0.25 cup heavy cream
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • Preheat oven to 400°F (200°C). Cut butternut squash into cubes and roast for 20 minutes.
  • Cook pasta according to package directions.
  • Heat olive oil in a pan. Add garlic and sage, cook for 1 minute.
  • Add roasted butternut squash, cooked pasta, parmesan cheese, and heavy cream. Season with salt and pepper.
  • Stir to combine and serve.

Notes

For a richer flavor, add a tablespoon of butter.
