Cookie Dough

  • 0.5 cup Unsalted Butter softened
  • 1 cup Brown Sugar packed
  • 0.5 cup Granulated Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 2 cups All-Purpose Flour
  • 0.5 teaspoon Baking Soda
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Butterscotch Extract optional, for extra flavor

Butterbeer Frosting

  • 0.5 cup Unsalted Butter softened
  • 2 cups Powdered Sugar
  • 2 tablespoons Heavy Cream
  • 0.5 teaspoon Vanilla Extract
  • 0.25 teaspoon Butterscotch Extract optional

Preparation Steps

  • Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

  • Beat in the egg and vanilla extract (and butterscotch extract, if using) until well combined.

  • In a separate medium bowl, whisk together the flour, baking soda, and salt.

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden brown and the centers are set.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  • While the cookies are cooling, prepare the frosting. In a medium bowl, beat together the softened butter, powdered sugar, heavy cream, vanilla extract, and butterscotch extract (if using) until smooth and creamy.

  • Once the cookies are completely cool, frost them with the Butterbeer frosting.

Notes

These cookies are best enjoyed at room temperature. Store any leftovers in an airtight container.
