Preparation Steps
Preheat oven to 350°F (175°C).
Combine chocolate chips and peanut butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring until melted and smooth.
Stir in crushed shortbread cookies.
Drop by rounded tablespoons onto a baking sheet lined with parchment paper. Make a small well in the center of each cookie.
Bake for 8-10 minutes, or until edges are set.
Remove from oven and immediately press mini eggs into the center of each cookie.
Let cool completely before serving.
Notes
These cookies are best served fresh. Store leftovers in an airtight container at room temperature.
