  • 1 cup Chocolate Chips
  • 0.5 cup Peanut Butter
  • 1 cup Shortbread Cookies, crushed
  • 1 cup Mini Eggs

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • Combine chocolate chips and peanut butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring until melted and smooth.
  • Stir in crushed shortbread cookies.
  • Drop by rounded tablespoons onto a baking sheet lined with parchment paper. Make a small well in the center of each cookie.
  • Bake for 8-10 minutes, or until edges are set.
  • Remove from oven and immediately press mini eggs into the center of each cookie.
  • Let cool completely before serving.

Notes

These cookies are best served fresh. Store leftovers in an airtight container at room temperature.
