Instructions
Preparation Steps
Sear the beef in a large pot or Dutch oven until browned on all sides.
Add the onion and carrots and cook until softened.
Stir in the tomato paste and brown sugar.
Pour in the dark beer, bring to a simmer, then cover and cook in a low oven (325°F) for 2-3 hours, or until the beef is very tender.
Notes
Serve hot with mashed potatoes or crusty bread. You can also add other vegetables like mushrooms or potatoes to the stew.
