  • 2 lbs Beef stew meat
  • 1 large Onion, chopped
  • 2 cups Carrots, chopped
  • 1 bottle Dark beer
  • 1 tbsp Tomato paste
  • 1 tbsp Brown sugar

Preparation Steps

  • Sear the beef in a large pot or Dutch oven until browned on all sides.
  • Add the onion and carrots and cook until softened.
  • Stir in the tomato paste and brown sugar.
  • Pour in the dark beer, bring to a simmer, then cover and cook in a low oven (325°F) for 2-3 hours, or until the beef is very tender.

Notes

Serve hot with mashed potatoes or crusty bread. You can also add other vegetables like mushrooms or potatoes to the stew.
