Preparation Steps

  • Snap off the tough ends of the asparagus and cut into 1-inch pieces.
  • Blanch the asparagus in boiling water for 2-3 minutes, then immediately plunge into ice water to stop the cooking process.
  • In a large bowl, combine the blanched asparagus, cherry tomatoes, red onion, and parsley.
  • Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl.
  • Pour the dressing over the salad and toss gently to combine.

Notes
